Pasta: Tinkyada Gluten Free Pasta a la Rachel Ray

Rachael Ray is one hot ticket. Just ask anyone- from the butcher to the neighborhood outdoors’ store owner! So I was pleasantly surprised when I received a copy of her new cookbook, 2,4,6,8: Great Meals for Couples or Crowds. Of course the minor catch is to convert her recipes to tasty gluten-free fare for my husband.

Last night I made Proscuitto and Spinach Bucatini, and wow was it a hit! The hit part though was a result of a great pasta safe for celiacs.

I substituted Tinkyada Fettucini-style wheat free/ gluten free pasta for the bucatini. This brand purports itself to be not mushy with a good, consistent texture. Tinkyada could not be more right. All I did was boil 4 quarts of water, added some salt and the gluten free pasta and cooked for 10 minutes, then rinsed with cool water. The package suggests 13-15 minutes, but I’m a stickler for al dente.

The Tinkyada gluten free fettucini looked just like regular pasta, tasted superb, and is actually quite good for you with its brown rice content. It had a nice bite to it, absorbed the sauce beautifully and truly lived up to its name. Tinkyada was pasta Joy for celiacs!

Sundried Tomato Tapenade: Meditalia

I believe I found a bit of celiac heaven in this little jar of gluten free Sundried Tomato Tapenade. Originally purchased from Wegman's, the tapenade made by Meditalia packs a punch in a 6.35 oz. jar.

The tapenade was tangy and flavorful, and was a perfect accompaniment to our Orgran pizza.

Containing tomato concentrate, sun dried tomatoes, water, vegetable oil (may contain canola or soybean), garlic, sweet paprika, spices, olive oil, salt, citric acid, oregano extract, the tapenade is natural and delicious.

The sundried tomato tapenade can also be spread on crusty bread or crackers, brushed on grilled chicken or veggies, and/or added to sandwiches. This is a dairy free, cholesterol free product of Israel.

Bread: Chebe Garlic and Onion Breadsticks

As Rob and I were blown away by the Chebe Bread, I immediately picked up a package of the Chebe Garlic & Onion Mix to try. Chebe’s Garlic & Onion breadstick mix is gluten-free, yeast free, casein free and lactose free.

I made the breadsticks essentially the same way by mixing the product with 2 tbs. olive oil, 2 large eggs, and 4 tbs. of milk. This time I omitted the pecorino cheese. I rolled into sticks about ¾” thick and placed on a non greased pan. I baked them for 23 minutes at 375 degrees.

Again, the Chebe was a hit! Totally gluten free and completely delicious! I served ours with a home-made spicy tomato and bean soup. I had to work hard to stop eating them and freeze the rest. I’ll let you know how they taste after being frozen.

One observation I will make is that I did miss the cheese. The garlic and onion just weren’t strong enough to taste, and I think the cheese would have boosted the flavor. But in all likelihood, I think the dry milk in the regular Chebe bread might be the missing ingredient here- and if you can tolerate dairy, I would go with the original and add in some garlic and onion.

Bread: Chebe Bread

As part of a celiac-awareness raffle, I won a package of gluten free, yeast free Chebe bread mix. Chebe’s motto is that it is “slightly unusual and unusually good”. Wow that is it the biggest understatement of the century!

Rob and I in short, were just astounded at the delicious bread I made up without the use of a bread machine. Chebe bread is created mainly from the manioc plant, and can be prepared quickly in a variety of ways.

I prepared ours using a fork to mix the package contents with 2 tbsp. olive oil and 2 eggs, along with 1 cup freshly shredded pecorino cheese, and an additional 1/3 cup of water. I then kneaded the dough by hand, rolled into small balls (1 in. in diameter), and placed onto a non-greased plan. The Chebe baked for 25 minutes in a 375 degree oven, and emerged golden brown.

The gluten free Chebe balls resembled and tasted just as delicious as cheesy gougeres. These were light, flavorful and perfectly bread-like- but still safe for celiacs. I couldn’t believe how close Chebe comes to gluten bread! One thing I did notice is that the pecorino was perhaps a bit too salty of a cheese. Next time I think I’ll try a fontina instead. Interestingly, Chebe can also be used to make sticks, can be frozen, made into pizza dough, and enhanced with a variety of cheeses, herbs, seasonings etc. Truly remarkable!

Bread: Breads From Anna Gluten Free Bread Mix

Breads From Anna is a gluten free, yeast free, corn free, dairy free, soy free and rice free bread mix. With so many seemingly missing ingredients, one might wonder if it is taste-free! Though this bread did take a bit of getting used to, it had far more flavor than expected.

With this mix, I combined 2 tablespoons oil, 1-1/2 cups milk (recipe calls for soy, rice or nut milk), 2 large eggs, 1 large egg white in the mixer. I blended the wet ingredients first, then added the dry ingredients- again trying very hard not to over mix. I placed the batter into a greased and lightly dusted (rice flour) loaf pan and popped in a pre heated oven for 70 minutes at 375 degrees.

What emerged was truly a satisfyingly dense loaf that was browned all over- but nearly obscenely heavy. I cut thick slices, added some butter and apricot jam and voila- except the bread wasn’t quite as light and airy as expected. It also had a rather yeasty- or rather a bean-like flavor- which is not surprising since it is comprised of chickpea, pinto, and navy bean flours. It really did resemble much more of a bean loaf rather than a soft spongy white bread. This is a truly hearty loaf! By day 2, though, the bread had taken on a bit more flavor if that makes sense, and after heating in the toaster and adding some cream cheese, it tasted quite good for breakfast.

In sum, this isn’t bread for the faint of heart, and probably would not make the best gluten free sandwiches, but it will certainly get you up and at ‘em in the morning!

Tapioca flour, arrowroot, chickpea flour, pinto bean flour, navy bean flour, potato starch, millet, Montina (perennial bunch grass and achnatherum hymenoides), crystallized honey, xanthan gum, salt, cream of tartar and baking soda.

Beer: Lakefront Brewery New Grist Beer

I left a small part of the story out of my Redbridge shopping adventure. The store manager insisted that I buy a six pack of New Grist beer by Lakefront Brewery. He said it was gluten-free, but there was really nothing on the packaging that made it clear. Well I took a pack home and would follow-up online to confirm the gluten-free status.

Sure enough, it is gluten-free. They test every batch before they make it and before bottling for gluten. Since yesterday was the Daytona 500, we brought over a six pack of Redbridge and New Grist along with three types of bacon wrapped dates (plain, almond stuffed, and cheddar stuffed) to Peter and Billy's house.

Since I've never been a beer drinker it's almost impossible for me to review New Grist with a discerning palate. My friends tried both and they were both good, but similar. They are both ales and are similar to Samuel Adams.

It was somewhat surreal to sit down on a couch, watch NASCAR, and drink beer.

My suggestions for New Grist:

1. Get a store locator on your site ASAP

2. Put your gluten-free, celiac safe status on your packaging!

3. Add a page to your site that a person can print out and bring to their local restaurant or beer store to make it easier for them to find and stock your product.

Bought a case of Redbridge Beer

Well it's a long weekend and my friends are having a Daytona 500 party out in East Hampton. I thought it was about time for me to actually have a beer at a sporting event instead of some other beverage. I'm no longer the wine guy or the mixed drink guy.

I went the the Redbridge site which has a retailer locator, when the site first launched it didn't seem to work, it does now. I engaged in my search to locate take-out Redbridge.

The first store I called had no idea what I was talking about.

Then I tried DeCicco market and sure enough the manager hoped on the phone and said they have it. Diana and I stopped at the store on the way out to the East End. They only had six packs sitting out, but after running into the same man I spoke with on the phone I was walking out with a case.

After we safely arrived my father-in-law tried a swig and his reaction was, "it tastes like an ale, like Samuel Adams." I'll have more feedback after the Daytona 500.

Tortillas: Food For Life Brown Rice Tortillas

Almost by accident, I picked up a pack of wheat free, gluten free Brown Rice Tortillas from Food For Life. I have (almost) never been more surprised by an accidental purchase.

Celiac Rob is a huge fan of Mexican and can usually be accommodated by burritos with corn tortillas or corn tortilla enchiladas, but corn tortillas come at a price. First off the corn tortilla taste grows a bit tiresome after a while; but more vitally, corn tortillas are tiny- making them difficult to roll up into a nice neat package.

Thanks to Food For Life, our corn tortilla troubles may have come to an end!! These wheat and gluten free brown rice tortillas are a gift from the Celiac gods! These tortillas are a standard 9" size, look exactly like flour tortillas and best of all, have a phenomenal taste! Soft with a nutty, mild flavor, Food For Life Brown Rice Tortillas have an authentic mouth feel. They aren't quite as pliable as flour tortillas, but who cares! You may forget they are wheat and gluten free- yep they are that good.

Cookies: Glutano Lemon Cream Filled Wafers

Glutano’s Lemon cream filled wafers are wheat free and gluten free, perfect for Celiacs and suitable for vegetarians. Three layers of crispy waffle wafers surround a lemony cream which meld nicely together on the palate. These cookies are surprising light, not too sweet and refreshingly lemon infused. They are almost like little cakes- and you would be hard-pressed to tell that they are gluten free! Rob and I highly recommend them.

Ingredients:

Lemon cream 69% (unhydrogenated vegetable fat (palm and rape oil), sugar, sweet whey powder, emulsifier (soya lecithin), acidulant citric acid, natural lemon flavour), maize flour, potato starch, emulsifier (soya lecithin), salt, thickener (guar gum), raising agent (ammonium hydrogen carbonate), antioxydant (ascorbic acid). May contain traces of nuts and eggs. This product does contain soya and milk.

Cereal: Erewhon Crispy Brown Rice

You asked for it and here is the first in a series of reviews of gluten free breakfast cereals.

I started off with Erewhon organic 100% whole grain gluten free Crispy Brown Rice cereal. It is low fat and contains less than 1g of sugar per serving. When shopping for this, I must admit I was drawn to the low-impact packaging made from 100% recycled paperboard. Go figure!

Granted I may have too much time on my hands, but I tend to read the quirky histories on milk cartons, cake packs, and this Erewhon gluten free cereal was no exception. Apparently Erewhon derives from a "19th century novel by Samuel Butler wherein Erewhon was a utopia where each individual was responsible for his own health". Who knew? The good news is that Erewhon gluten free Crispy Brown Rice cereal only contains organic brown rice, organic brown rice syrup and sea salt.

Taste
Though undoubtedly a more impressive list of ingredients I could not ask for, taste was a bit of another matter.

True, Erewhon gluten free Crispy Brown Rice cereal is a close contender to say traditional Rice Krispies- it has all the right shapes, crunch and similar mouth appeal- unfortunately, I'm just a bit bored by the malty snap, crackle and pops. Like its glutinous counterpart, Erewhon's Crispy Brown Rice cereal absorbs the milk a bit too quickly, leaving me scrambling to finish the bowl before it gets soggy. But hey, that's just a personal preference. Lots of people actually like a hefty portion of milk in their cereal!

So in sum, Erewhon's organic, gluten free Crispy Brown Rice Cereal is celiac-safe and tastes very similar to Rice Krispies-type cereals. If you've never had Rice Krispies, hey you might be blown away by the crackly sounds emerging from your bowl, otherwise brace yourself for the comfortable blandness of a rice cereal.

P.S.
As a postscript to this review, I will rather reluctantly mention that I "created" the Crispy Rice Snacks from the recipe on the cereal package, and uh they didn't turn out so well.
I will concede that I used too much vanilla extract and not my preferred brand of honey- so the Crispy Rice snacks had a bit of an odd flavor with the peanut butter, and didn't hold their shape.

The resulting consequence of this culinary mis-fire, is to merely point out that I do think Erewhon's Crispy Brown Rice cereal, made according to instructions, will make absolutely Superb rice-krispy marshmallow treats, which are Rob's absolute fave! I'll let you know how they turn out.

Cakes: Authentic Foods Lemon Cake

Now that the cold weather has finally hit, I took the opportunity to do some re-shuffling in the kitchen cabinets. I had forgotten that we had a gluten free, wheat free Lemon Cake Mix from Authentic Foods that remained un-tried. Since it had been a while that I made Rob a celiac-safe dessert, I whipped up the mix and could not believe the results!

To make 1 gluten free lemon cake, I first preheated the oven to 350 degrees, lightly sprayed a 9 in. pan with Pam, then I mixed 2 eggs, ¼ cup milk, 3 tablespoons of water and 3 tablespoons of canola oil in a mixer. The package cautions not to over beat (affects the rise-factor) - which I tried hard not to do. I poured the batter in the pan, let it sit for 5 minutes, then baked for about 30 minutes. The package suggests 30 min. for an 8 in pan, 35 min. for a 9 in. pan, and 25 minutes for 12 cupcakes. As my oven runs hot (which I forgot), I should have pulled the cake at 27 minutes- but no matter. I then let the cake cool and sprinkled with powdered sugar.

The gluten free Authentic Foods Lemon Cake looked very attractive with its sugar sprinkling over the honey brown exterior. Granted, it didn’t rise like a bundt cake- but that’s okay. I gave Rob the first wedge and awaited the true test. The celiac-friendly dessert was bursting with lemon taste, was light with a delicious sponge interior, and was a definite hit. I was completely blown away by a gluten free lemon cake! I couldn’t believe it lacked flour. Rob loved it so much, the cake was history by the next morning. I don’t know how easy Authentic Foods are to locate locally, I will very likely be placing my order soon.

Mrs. Leeper's Cheeseburger Mac

Always on the look-out for easy to prepare, natural and tasty gluten-free dinners, I recently served up Mrs. Leeper’s Cheeseburger Mac. This is a wheat free, gluten free mix of rice pasta and sauce. I only needed to add in ground beef, though ground turkey or tofu could be substituted. Though my experience with “hamburger helper”-type mixes is a bit limited (usually filled with chemicals and sodium), celiac Rob couldn’t wait to try this.

So I’m just prefacing that I wasn’t sure what to expect from Mrs. Leeper’s.

The prep for the cheeseburger mac was astoundingly easy. I browned a pound of (organic) beef, then drained it. To the pan, I added 1-1/2 cups hot water, 1-3/4 cups fat-free milk, plus the sauce mix. All of this was heated to a boil, then I added the gluten-free rice pasta, reduced the heat and simmered for 13 minutes. After 13 minutes, I removed from the heat and let it stand a few minutes.

Taste

On the package is a statement that Mrs. Leeper’s tastes great, is fast and pleases everyone. Rob and I were more than pleasantly surprised. It was not bad at all! The gluten free cheeseburger mac wasn’t overly cheesy, had a great texture, and was quite satisfying. The rice pasta, a product of Italy, was extremely close to gluten pasta. Of course I wouldn’t say this was exactly gourmet fare- but for celiacs struggling to find a convenient and wholesome meal that can be prepared in minutes- you can’t beat Mrs. Leeper’s gluten free cheeseburger mac for dinner! One tip I will impart, is to take the advice of the package, and add some toppings to further enhance the flavor. Fresh chopped tomatos, black olives, and/or scallions would give the cheeseburger mac a boost.

Cookies: Glutano Ginger Cookies

Well, Rob keeps bringing home the Glutano gluten free celiac products- so here is another review to add to the collection.

Glutano’s Ginger Cookies are wheat free, gluten free and suitable for vegetarians. As Glutano is based in the U.K., the products tend to have a decidedly European slant. The ginger cookies are no exception. I certainly don’t bring this up as a criticism- it is purely meant as a guide in the world of gluten free! These cookies are fairly small and come about 20 to a package, are less sweet and more like a tea biscuit than a big snacking cookie.

Taste:

The gluten free ginger cookies are a rich molasses color. On first bite, I noticed a ginger tang within the crumbly inside. I was hoping for a crisper, crunchier cookie instead of the one I was eating. At first I thought maybe the cookies were stale- but the end of the box was stamped fresh until August, 2007. So what can I say- the ginger cookies just aren’t that good. Perhaps they sat on a hot shelf somewhere. Though I would say the gluten free ginger cookies do resemble a gluten cookie of sorts, they are decidedly more like a ginger shortbread cookie with a whopping 4 g of saturated fat and 60 of the total 130 calories from fat, per serving. That’s steep for a not so great tasting cookie!

Raw sugar, unhardened vegetable oil, rice flour, maize starch, maize flour, lupin flour, caramelized sugar syrup, spice (ginger), raising agent (ammonium hydrogen carbonate, sodium carbonate), sea salt, thickener guar gum. May contain traces of nuts, eggs, and milk products.

Cookies: Pamela's Almond Anise Biscotti

The second Pamela’s product I tried was the Almond Anise Biscotti. These too are wheat-free and gluten-free and contain a pungent mix of anise and almond. They are twice baked to ensure they’ll stay crunchy in your favorite beverage. The anise almond biscotti are satisfying and not too sweet, just like their chocolate walnut counterpart. It does seem though that the almond anise biscotti disintegrate more quickly than the chocolate walnut. The cookie just seems to break up faster in your mouth-meaning there’s no prolonging the biscotti experience for a longer time! I believe it may be because the almond anise is finer in consistency. Still I can’t help but be impressed by the delicious taste.

Never mind that these are gluten free, these are the best biscotti I’ve had in a while - a perfect treat for celiacs.

Brown rice base (brown rice flour, white rice flour, tapioca starch, sweet rice flour, xanthan gum); molasses and honey; butter, egg whites, almonds, white rice flour, natural almond flavor, natural vanilla flavor, natural anise flavor, grainless and aluminum free baking powder (sodium bicarbonate, sodium acid pyrophosphate, potato starch); sea salt, baking soda, xanthan gum.

Pamela’s Chocolate Walnut Biscotti are deliciously crunchy with a hint of buttery richness. The Old World biscotti are twice-baked ensuring they’ll hold up in your favorite beverage. I tried mine with a cup of hot hazelnut coffee. The biscotti did leave a surprising amount of crumbs in the bottom, but I didn’t mind. There were whole chunks of walnuts to bite into surrounded by a satisfyingly hard cookie. These are a perfect celiac treat to keep on hand for tea, coffee, gluten-free guests and friends alike. It is truly a civilized biscotti that can rival any gluten biscotti on the market!

Chocolate: Glutano Chocolate Hazelnut Bar

Glutano’s Chocolate Hazelnut bars taste a bit like creamy hazelnut heaven. The bar is pure decadence with its rich milk chocolate coating, and crunchy wafer interior filled in with nutty cream. I do believe it will satisfy even the most discerning chocolate palette.

On first bite, the chocolate just melts in your mouth giving way to the multiple layers of cookie. It’s very similar to an elevated Kit Kat candy bar. Certainly Glutano’s Chocolate Hazelnut Bar tastes too good to be good for you, but this is definitely for any Celiac who needs to satisfy a gluten-free chocolate craving.
